We have some food shortages here at the moment so dinner is going to be a bit bland this week, lots of frozen veg as there were a few things out of stock and very little meat. Tonight is either sasuages or nugget parmigana
I was going to make fried rice, sorta haha, with chicken and vegies, BUT, I have no rice, doesn't quite work! hahaha!!
So now I'm onto something new hahaha!! I think I might try to make chicken Parmesan.. we'll see.
ETA: I "made up" my chicken dish tonight, I posted it over in the poultry thread, man was this QUICK, easy and YUMMMMMMMMY!
Tonight I am making chicken enchiladas and rice. Going to freeze plenty of leftovers for lunch. I need to pickup some more storage containers - DH never seems to bring his home.
Got spare-ribs in the oven right now! Just put them in, but I taste tested the sauce (its a home-made one) and I expect them to be VERY delicious. Will be making rice and salad for sides. If they go well, I'll post the recipe after supper, but its just from a Company's Coming cookbook.
Today and tomorrow are just gonig to be leftovers. We have compiled quiet the pile of leftovers. I think Wednesday I'm going to make pork chops, brown rice and veggies. Simple , easy and yummy!
Wednesday night we are having chili soup. Yummy!
Tonight it's Chicken Cordon Bleu, savory rice, & steamed vegetables!
Tonight we had a Sausage and Broccoli Noodle Casserole. It was delish!! Tomorrow is my late shift so we will just have leftovers, but I already took out chicken for Lemon Chicken and Rice on Thursday.
Tonight is lemon pepper pork chops (plain ones for the kiddos), stuffing, and steamed broccoli.
Mmmm, everything on here is sounding so tasty!
Our dinner tonight, my mother made, and lets just say my son said 'Mom! This beef is sooo chewy! It's taking forever to eat!' It looked like he had a mouth full of Big Chew gum. LOL Not good. Wish I was having what some of you ladies had.
Pam, when you make your chicken fried rice do you cook your chicken with oyster sauce? I'm telling you, it makes it so delicious. We just love fried rice in our house.
Tonight is Beefy Noodle Casserole. Super yummy and super easy. AND I'm using whole wheat noodles and FF s. cream to save some calories!
Tuesday I made a chicken stir-fry with a sesame-soy sauce. Yesterday I made taco soup with homemade baked tortilla chips. Today I am making baked potato soup, and tomorrow I think I'll be making some kind of pasta.
I made BBQ Turkey Meatballs it was so yum! We had salads and steamed snap peas along with them. I posted my recipe on the Healthy options thread.
I made chicken and cheese on wheat rolls. I cooked the chicken on the stove with some water (basically boil it). Put it in a chopper, then back in the frying pan with just crushed garlic (no water this time). Let the garlic go through the chicken, then add american cheese. You can add as much or as little cheese as you want. Put on roll and serve YUMMY
Pamela - Last night I tried your suggestion for leftover roast meat. The night we had the roast, which I had cooked in the crock pot, I just kept the leftover meat and rice in the the pot and put it in the refrigerator (separated from the 'elements' part, of course, lol). About 1pm yesterday I took it out of the refrigerator and back into the elements part and turned it on low, adding a little water. I was low on BBQ sauce, so I just added what I had, then later when it was almost done and had bought more, I added a whole 18 oz bottle of Kraft Hickory Smoke BBQ sauce (I had a lot of meat left over), then I shredded it using an extra large fork (it was so tender that it was pretty easy). We had it on toasted whole wheat bread with a little mustard, and whole green beans as a side. It was soooooo good! We still didn't eat it all, so we'll have it again on Mon or Tues. I can't wait!
