    Default What to do with a butternut squash????

    Everyonce in a while we allow the kids to choose a fruit or veggie we have never eaten before during our grocery shopping trip. We then bring it home, find a recipe and try it out. Sometimes it's a hit. Sometimes it's a miss.

    Please help me make the butternut squash Lil D picked be a hit.

    Mash it - peel cube boil just like mashed potatoes, add butter - yummmmmmy.

    You can also add a splash of maple syrup or oj

    I did a curry butternut squash soup thing. Just boiled it down, pureed it and put curry in it till it tasted right. But even butternut squash mashed would be good.

    Roasting it like potato until it's tender, then upping the heat a bit to make it caramalise around the outer edges is yummy!!
    But mashing is just as good and really easy. You can also roast it and add it to a salad.

    Cut it in half, add a couple tspn of brown sugar and butter. Bake it (350)until soft, scoop out the meat and beat it like mashed potatoes. Really yummy.

    ditto what Dana said...
    Squash is one of my fav.s! I usually slice it in half, lightly salt and pepper (and butter if you want) the insides, then put it face down in about a half inch to an inch of water in a glass casserole dish and bake it (around 350ish) until it's really soft (it's been a couple of months so I can't remember how long that takes)... Then scoop it out and mash it a bit with some butter and salt and possibly some brown or raw sugar as well!!! mmmm
    Now I have to go buy a butternut squash...

    I peel the skin cut into even sized pieces slosh a bit of olive oil salt and pepper over and bake in a preheated oven until the butternut is done.

    Variations I try are adding sliced red pepper about 20 minutes before the end and then about 5 minutes before I take it out the oven I had crumbled bits of feta cheese.
