Yum! Those recipes look great! I'm definitely going to try out the Jambalaya the week after next. The Peanut squash soup looks really good too so I'm saving that for this fall! I'm going to have to check out the website some more. I like fast and easy recipes too. I don't mind cooking the more complicated recipes but most nights I just want to get something delicious and healthy on the table FAST! lol

This looks so easy to make and I really like to eat Olive Garden once in a while but they just put soooo much salt in their food that I blow up like a balloon for days! :( So, I just make my own at home. I have a recipe for their chicken scampi that I loooove but I can't seem to find it anymore. Boo!
Chicken Sriracha Stir Fry
We're big fans of Sriracha sauce so I'm really excited to make this. I'll probably add more veggies like baby bok choy just because I like lots of veggies in my stir fry.
White Chicken Enchiladas with Green Chili & Sour Cream Sauce Recipe
This looks really good too! :D I bet you can get everything prepared the night before and store it in the fridge. It should be really simple to assemble everything the next day and bake it.
Yum Jina! I definitely want to try the Chicken Enchiladas and the Sriracha Stir Fry soon. Maybe those go on the list for next week too. Our current deal is that I make dinners on M,W,F, and DH makes it on T, R, and then we are more flexible on the weekends (which means I usually still end up making it, or we get take out :lol:) I'm basically trying to plan on at least 3 yummy dinners a week.
We sort of have the same schedule right now. I cook on Sundays, Tuesdays and Thursdays. M has class on Mondays and Wednesdays now so we just eat leftovers on those days. We eat out on Saturdays and sometimes on Fridays but trying to keep it once a week. So, yeah, I try to cook 3 different dishes a week. :D I'm really liking this schedule especially since I've been using the crock pot more. I just don't have the energy like I used to to make fancy meals all the time. :rolleyes:
Jina, I wanted to let you know that I'm cooking chicken enchiladas tonight! :D It sounded so good, I just had to do it, and I actually pre-planned enough to cook the chicken last night, so I have cooked chicken to work with tonight. Haha, it always cracks me up when a recipe calls for cooked meat, but makes no mention of cooking the meat or includes that in the prep time. Like, am I the only one that doesn't usually have a store of pre-cooked meat just hanging out in her fridge? LOL I know that if I were smart, I would plan ahead, and make a double batch of chicken one night so I could use the leftovers the next night, but I'm not that smart or organized, so I always find myself going "Wait, I have to cook a chicken first, before I can even begin this recipe????" LOL But not today. Today I am set. Will try to remember to post pictures!
Yay! I think you guys are going to really like the enchiladas! I made it last night and M said it was THE best homemade enchiladas he's ever had. He devoured his dinner last night. I must say that it WAS pretty darn good! lol
I know what you mean about having cooked meat around. It's like we're supposed to just have cooked shredded chicken laying around. lol
I'm pretty sure you can freeze this recipe so this is definitely going on my list of things to freeze when it gets closer to my due date.
I did make small little tweaks to the recipe. I added 1/2 cup of finely chopped onion, one seeded jalepeno finely chopped and some shredded extra sharp cheddar cheese to the chicken mixture. I also added some extra sharp cheddar on top before baking. We really like onions so I had to add them to the recipe. :rolleyes: Oh man...seriously good! :D
I made Sriracha stir fry the other day and it was delish! I added a lot more Sriracha than the recipe called for because we really like things spicy. I just wanted to share some pics!

I tried this broccoli recipe last night. It was really good and I'm actually not a big fan of cooked broccoli. I love it raw with ranch dressing and it's fine in a casserole if it's smaller bites but just steamed broccoli....yuck! DS2 ate quite a few bites even...different story for DS1 but can't get him to eat a lot of things anyway.
I didn't measure anything out just seasoned to what looked good to me. FYI, I also left out the pine nuts and basil just because didn't have any.
Yum, that sounds really good!!!! I will be making that very very soon. T loves broccoli anyway, so I'm sure he'll eat a ton of it. :)
