Danielle, that quiche sounds really good and looks really easy to make as well. I'm going to save this recipe for later. For some odd reason I haven't been wanting to eat eggs at all. Which is really strange because I LOVE eating breakfast food for dinner. I think I've had eggs once since I got pregnant. lol
Alissa, the soup is really good. It so easy to make and my Hubby loves it and he's not really a soup person. I'm making the smothered porkchops next week! I can't wait! Thanks for the recipe.
The green bean and chicken casserole turned out pretty good. It definitely wasn't gourmet food or anything, it was more like comfort food which I like and Hubby liked it too. I think little kids would really dig it. lol I think I need to add lots of black pepper next time. I will be making this again since it was so easy to make!

Anybody ever make hummus?
It's very common in some areas but I've actually only had it once that I can remember. Well, once that I liked it...I tried it at a tapas restaurant and it was sooo yum. So I tried some store bought and it was terrible.
I'm looking for some kid friendly things for lunches or snacks that are healthier and that they will actually eat so was going to try to make some. I googled it and came up with a recipe to try...of course I read it's better if you cook the beans from scratch but I think I'm going to try it with canned beans for ease of making. Like I said earlier if it's not easy enough I likely won't make it on a regular basis. I'm hoping it comes out good.
So I was wondering if any of you make it and do you have any tips or suggestions?
Lynn, I've never made hummus, but my cousin did once for a party. She made two kinds, mediterranean and roasted red pepper. The red pepper one was AWESOME. We had it on crackers and celery. The mediterranean one was HORRIBLE. The consistency was off and it had a layer of...grease? or something at the top and the flavor was...off putting.
Hmmm, yeah from what I am reading it seems the consistency is a big deal and it may take some practice to learn how to get that right or at least to your specific taste. I usually love anything labeled roasted red pepper...that does sound yum.
Beef and Bean Taco Casserole
Tried this recipe for the first time last night and it was yummy.
Only change I made was to use whole kernal corn in place of green peppers. I like green peppers but figured it would go over better with my littles using corn. Well, aside of not using the brand names called for...I used On The Border salsa, Taco Bell taco seasoning and Rosarita refried beans. Also used my favorite corn chips...tostitos blue corn chips.
Not the healthiest dinner ever, but tasted good.

Lynn, I've only made hummus once or twice. I just used a recipe I found on-line. It was pretty good but then again I have nothing to compare it to because I just don't eat it very often.

Dinner tonight for us is left over Pizza Hut. I went grocery shopping as well, but DH made me wait 'til he was almost home so he could carry everything in.. which is nice, but makes it too late to cook anything when I get home. Plus as soon as I hit the kitchen I was puking..haha
