Summer recipes (OT)

Hi girls-

I'm making an altered project (recipe box) for the family in my class that lost their home. We are doing a class donation basket for outside stuff and grilling, etc.

Here's where you can help! I need ANY summer recipe you have that is yummy. You can post it on here, send me a PM, link, whatever! I'm compiling them all on recipe cards and I'll post it when I'm done.

Plus if you send me your e-mail I'll be happy to e-mail them all to you so I can give back for you helping me!! Smile

Taco Salad.

One head of lettuce, any kind you like. I prefer red leaf.
Ground trukey meat, browned, and simmered in Taco seasoning
Two tomatoes
Green onions
Pour italian dressing over it and add Fritos. Yummy.

Broccoli Salad

2 bunches broccoli (or just buy florettes) If you buy a head cut into florettes
1/2 lb bacon (cooked and chopped) we buy the microwave kind
1/2 cup chopped purple onion (optional)
1 cup grated cheddar cheese

dressing for the salad
1 cup Miracle whip
2 Tbs apple cider vinegar
1/2 cup sugar

mix dressing till dissolved. Add to salad and mix. Refrigerate at least 1 hour.

Juicy Burgers
1 egg
1lb lean ground beef (may substitute grd turkey)
1/4 cup Progresso Italian style bread crumbs
1/4 cup milk
1 tsp dried minced onion
1/2 teaspon salt
1/8 teaspoon pepper

Beat egg in large bowl. Add all remaining ingredients; mix well. Shape mixture into 4 patties.

Place on grill over medium heat. Cook 10 to 12 minutes or until thoroughly cooked, turning once.

BBQ Pork Sandwiches

3lb Boston Butt Roast
1 cup water
1 - 18oz bbq sauce of choice.
1/4 cup brwn sugar
2 tbs Worchestire Sauce
S&P to taste

In slow cooker place Boston Butt Roast and Water. Cook on high for 7 hours.
After 7 hours take meat out of slow cooker remove any additional fat and shred pork. Skim the fat off the top of water remaining in slow cooker. Return shredded pork to slowcooker and add remaining ingredients. Cook 1-2 more hours on high.

Recipe for summer time potlucks

We just call it Chicken Shell Bites

Fillo shells (in freezer section or the dairy section) - 3 boxes
2 10oz cans chunck Chicken drained
1 cup mayo
Curry Powder (I do the curry to taste)
3/4 cup shredded Montery Jack Cheese
s&P to taste

First bake shells. While shells are baking Mix chicken, mayo, shredded cheese, s&p and curry. Once shells are done baking put a bit of the mixture into each shell. As an option you can top each one with some more cheese and put in oven to melt cheese.

Summer chicken Salad

1 whole chicken (cooked and deboned or about 4-5 chicken breasts)
1/2 bag red grapes
1/2 bag green grapes
3 apples, diced
1 large can pineapple chunks (drain and reserve the juice)
1 box small shells or rings- cooked
1 bunch celery- chopped
1 medium red onion- chopped

Mix all of the above together. Add sauce. Serve chilled on a lettuce leaf, with a croissant.

Sauce-
Reserve of pineapple juice (at least 1/4 cup)
1/4-1/2 cup of sugar
miracle whip
(I start with all the pineapple juice, add 1/4 a cup of sugar and a few big spoons of miracle whip... whip that together and then taste. You're looking for a sweet sauce with just a little tang.)

Black Bean Corn "Salsa" Dip

2 cans black beans, rinsed and drained
2 cans corn, drained
1-3 jalapenos, finely chopped
1 red onion, chopped
1 red bell pepper, seeded and chopped
3-4 avacadoes, chopped
1 tsp. minced garlic
salt & pepper (to taste)
1 small bottle Wish Bone Fat Free dressing

Mix all in large bowl and refrigerate atleast 4 hours before serving...enjoy with corn chips!

I don't know an exact recipe but we love quesadillas...you dice the chicken up small so it takes no time to quickly cook up in a pan...
throw the chicken on top of an open tortilla, add diced red and green peppers, onions, tomatoes, throw some grated cheese on top, cover with another open tortilla and throw in the oven....then cook just til the cheese melts and the tortilla is slightly browned and slice it up like a pizza!

6 oz. frozen orange juice concentrate
1 cup milk
1 cup water
1/2 cup sugar (more or less to taste, or substitute powdered sugar for a creamier taste)
1 tsp. vanilla extract
8-9 ice cubes

1. Combine all ingredients except ice cubes in blender.
2. Blend for about 1-2 minutes, adding ice cubes one at a time.
