freezer meals!

Just because I'm so proud of myself, I had to post. Wink

I asked MIL to take the baby for a day so I could get my freezer meals done... baby dropped so I was getting concerned that I didn't have it done.

I did my own thing, but Lenora's? enchilada casserole sounded really good, so I did make that....

I have a total of 8 pans of food in the freezer now.
enchilada casserole
eggplant parmesan x2
lasagna
sausage and cheese quiche
macaroni and cheese
roast beef
baked ziti

The only thing I didn't get done coz it got late was scalloped potatoes and ham, but there isn't any room in the freezer for another pan anyway.

woohoo!! And they're all huge servings so even if people are over, it can feed quite a few people. Wink

I guess baby can come anytime now. Smile

Yay! Good for you!

I have gone out to our garage freezer a couple of times just to look at all my meals waiting for us. It's such a feeling of accomplishement!

That's awesome!

I wanted to get some meals frozen, but I'll be lucky if I get a batch of muffins frozen! Plus we don't have an extra freezer, just the one on the bottom of our refrigerator, and I'm not sure where I would fit them! But it would be so nice to have some meals to just stick in the oven and heat up!

Yay! I'm totally excited about my freezer meals too! I've stuffed both our chest freezer and our regular freezer! Such a feeling of accomplishment and being prepared :-).

Amanda- baked ziti is an Italian pasta dish. It uses ziti noodles (obviously) mixed together with marinara sauce, ricotta, mozzarella, some seasonings, and I think my recipe has an egg in there (you don't taste it, it just helps everything to come together), and usually some parmesan sprinkled on top. Some recipes have sausage in it too. Easy and yummy! I didn't make it this time around, but I've made it as a freezer meal in the past.

Good for you! That sounds great!

I'm not making any freezer meals. We have tons of ingredients for things in the pantry/freezer though. My DH really enjoys cooking dinner and he'll have 2 weeks off when the baby comes, so I know he'll keep us well fed. Wink (I'm totally spoiled with a husband who is a great cook!)

My husband won't/can't make anything but a tuna melt... so if I didn't do it, there wouldn't be anything to eat. so I'm jealous. Wink hehehe

I don't have any - which is exactly why my 1 year old got sent to grandma's... LOL I can either handle him, OR cooking - not both!!!

... though my chiro did say today he was amazed how "mobile" I still am....

For those of you who said they don't have an extra freezer - neither do i. Smile

I bought the "lasagna pans" in foil pans from the dollar store (2/$1) and 8 of them fit in my freezer and I still have about 1/3 of the freezer left. Still have some meat and breads in there, along with a few other things.... don't be discouraged by lack of freezer space!!!

Good for you! I'm jealous! I didn't do any of that so I was up trying to cook after my c/s. LOL!
