Alissa, The Zumba Tone does more arm exercises with free weights. So one song we'll do the dance, the next song we'll do a whole bunch of presses, then a dance song, then bi's and tri's. Your dinner tonight sounds GREAT!!!!

Alissa, nope, you can't eat anything for 3 days. My hubby has done it before but I haven't so I'm really excited but yeah, it's going to be hard!
Are you counting calories? One thing that's a pain in the rear for me is calculating the calories in recipes and having to enter it in Myfitnesspal.

AFM, I'm so mad at myself. I went grocery shopping on Saturday high on painkillers and came home with a cart full of junk. I mean, frozen pizzas, french fries, corndogs, chips, cookies and other really bad stuff ugh! Oh and M didn't even try to stop me. He claims I looked too happy so he didn’t want to stand in the way….men!
Despite having a fridge full of junk I still managed to eat somewhat healthy.
Breakfast - Cottage cheese - 100 cal., fresh fruit salad - 100 cal.
Lunch - Veggie/tofu miso soup - 163 cal.
Dinner - Fish, shrimp, broccoli and salad - 535 cal.
Dessert - fresh fruit salad - 100 cal.
Snacks - Smart pop kettle corn popcorn - 75 cal., cheese stick - 80 cal., 4 nilla wafers - 70 cal.
Total - 1219 calories
Breakfast - Cottage cheese - 100 cal., 1/2 bagel - 130 cal.
Lunch - Veggie/tofu miso soup - 163 cal.
Dinner - California Pizza - 450 cal.
Dessert - Fresh fruit salad - 100 cal.
Snacks - ?
Ugh, I can't wait to get rid of all the junk food....I don't want to just toss them so I'm going to have to eat them up! I want to start cooking healthy meals again. I've been so bad about eating out.
Has anyone seen the A&E show Heavy? Wow, that show is really inspiring. I think if a 500 lb. person can run a marathon than I should be able to do it too. Of course, it takes them several months to train but still....makes me feel a little ashamed at how out of shape I am! Lol
Jina - Yes, I am counting calories when I can, when I remember. Some days I am better about it than others. The last two days I have not been great about it. Your food sounds great! I loooove cottage cheese. My favorite is to mix cottage cheese, a little bit of dry ranch dressing mix, and fresh diced tomatoes. Love!
Lisa - That sounds like a great workout! How fun and how good for you. I wish my rec center offered a Zumba tone class!
AFM - I had the very yummiest salad for lunch today. I am obsessed with this salad place right up the street from my work, but I was mad at them because they just took away my favorite seasonal salad, and they don't have all of the ingredients so they can't just whip one up for me. It. is. AMAZING!!!! All fresh Colorado produce, including CO peaches (*drool* I freaking LOVE peach season in CO!!!!) and CO made goat cheese. Now I have to hurry up and go a whole bunch more while the peaches are still available.
I'm not going to work out today - I actually forgot my gym bag at home, and it's my day to pick up T so I don't have time to go and get it. But I did go on a half hour walk today on my lunch break, so at least I wasn't completely sedentary. Back to the gym tomorrow for sure. I actually miss it!
Alissa, I've never tried cottage cheese with ranch. I'll have to try it! Ooh...Mad Greens looks amazing! Ugh, I wish we had one here! You know I LOVE salads. I have a recipe for a new salad I'm going to try. I'll post the recipe after I try it.
I really tried hard to count calories while I was on vacation but I ended up eating some bad stuff. Mmm....smores....lol. Oopsie. I guess I did something right, though, because I've lost 4 lbs. so far. Most likely it was from stress.
I am getting ready for the detox and I can't have any caffeine or meat for 3 days before starting the Cleanse. I am going to prepare for the Cleanse for a week instead of just 3 days. I made some pasta salad minus the pasta and it was pretty good. It was a great way to eat bunch of veggies. I'm going to make baked tofu and broccoli stir-fry with cauliflower rice for dinner tonight and I can't wait.
I'll be back to post the recipes later. I'm still trying to get settled here at home. The past several days have been very crazy here.

Jina - I want your baked tofu and broccoli stir-fry recipe! I am looking to cut back our meat consumption to a couple of days a week, so I am always on the lookout for new veggie recipes and ideas.
I am really interested to hear about how your detox goes. Again, I don't know that I would have the willpower to do it myself, but I am very interested to hear how it goes for you, if you can actually tell a difference in how you feel afterwards.
AFM - I am doing pretty well. Yesterday I did about an hour total of walking on my breaks and lunch, and then I went to the gym and did 45 minutes on the exercise bike. On Tuesday we had everyone over for dinner, so we had lots of leftovers, so yesterday I had:
Breakfast: Bagel w/cream cheese
Lunch: Leftover Broccoli Rice Casserole + salad
Dinner: Leftover Spicy Grilled Chicken + Broccoli Rice Casserole + salad
Today I am having:
Breakfast: Bagel w/cream cheese
Lunch: Lentil Soup + baby carrots
Dinner: ? Not sure yet, but looking for good ideas online
I am also going to try to get in an hour total of walking on my breaks, and do a half an hour of ST.

Alissa, here is the recipe for baked tofu and broccoli.
Baked tofu and broccoli
14-16 oz firm tofu
Broccoli – Mann’s bag (12 oz)
Half a medium onion – chopped (bite size)
Other veggies (optional) – Whatever you have on hand. I had some mushrooms so I used that
2 garlic cloves
½ cup – low sodium soy sauce
4 tsp – toasted sesame oil
1 tsp – onion powder
1 tsp – garlic powder
1 tsp – crushed red pepper
¼ tsp – ground ginger
1 tsp – sesame seeds
Cut tofu in to bite size chunks and line them up in a 9x13 baking dish and pour half of the marinade. Cover with plastic wrap and place in fridge for several hours. The longer you marinade the better.
Place broccoli, onion and minced garlic in a large bowl and pour in the remaining half of the marinade and gently toss. Cover with plastic wrap and place in fridge for several hours.
Preheat oven to 400 degrees.
Line 2 baking sheets with foil and gently spray with cooking spray.
Place tofu in one pan and broccoli in the other.
Bake tofu for 30 minutes turning them over about half way.
Bake broccoli for 20 minutes.
Serve over rice.
Oh and this is one of my favorite meatless recipes. I seriously love it.
Black Beans and Rice
2 – 15 oz cans of Bush’s Best Black Beans (Frijoles Negros)
2 tbsp - Olive oil
½ tsp – salt
2 - Garlic cloves (diced)
2 – Serrano Peppers (diced)
1 - Small onion (diced)
2 – Carrots (cubed)
1 ½ - 2 cups of frozen sweet corn
Shredded cheddar or Mexican blend cheese
Low fat Sour cream (optional)
Heat olive oil in a medium pan on medium heat
Sauté carrots, onion, salt and pepper for a few minutes. Add fresh garlic, Serrano peppers, garlic powder and cayenne pepper and stir and continue to sauté for a few minutes. Add the black beans and corn and cook until done (a few more minutes).
Serve over rice and top with cheese, salsa and sour cream!
I'll definitely let you know how the detox goes. I've heard that it does wonders for your skin! Also, you’re supposed to have more energy as well. We shall see!
I'm going to start working out soon. I've been kind of lazy about it but it's time to kick it up a notch! lol You seriously kick butt in the exercise department! Mmm....spicy grilled chicken sounds sooo good. Too bad I'm not allowed to have meat for a while. Please share the recipe, though!
Oh and if anyone is curious about cauliflower rice please just run the other way. It's seriously disgusting...lol. Ack! Never again!

Yum, both of those recipes sound really really good. I am thinking about making the tofu and broc tomorrow night for dinner. The only thing is, I would have to either marinate them starting tonight before bed, or at the latest tomorrow morning before I leave for work, all the way through to dinner time tomorrow. Do you think that they would hold up okay being marinated for like 12+ hours? I *think* it would probably be okay because nothing in the marinade is super acidic, so it probably wouldn't break down too much, but I just don't want everything to get super soggy and mushy. I think I'll give it a try, but if it doesn't work out I will make it on a weekend instead where I am home to throw it in the marinade 3 or 4 hours in advance instead.
I'm definitely going to make the black beans and rice as well! That is a great weekday dinner because it sounds quick, easy, but also yummy and healthy. That's right up my alley.
For the spicy chicken, we really didn't do much. A couple of months ago we were at Costco and they were giving out samples of Schultz's Spicy Original Hot Sauce. It is SO good. It's spicy and garlicky and just super, super good. So we bought a big bottle of it, and for dinner we just brushed several coats of it onto chicken breasts and then grilled them out on the grill. Easy peasy.
AFM - Let's see. On Friday I did an hour on the elliptical machine at the gym. I love going on Friday nights because it is so empty. I can change the TV to whatever I want while I work out because there is no one else there. LOL I did my Zumba classes on Saturday and Sunday (Sunday is the hard(er) day - the instructor is a total maniac AND she gives us an hour and 15 minute class instead of the hour that's on the schedule.) The only thing is that we didn't eat that well this weekend, so that is something that we need to focus on more.
Today is a rest day, so I will just walk on my breaks and lunch, but I'm not going to the gym.
Breakfast: Bagel with cream cheese, coffee
Lunch: 1/2 sandwich with sliced deli chicken breast and light mayo, 1 cup tuscan bean and rice soup
Dinner: I know DH is making a London Broil, but I don't know what he's making with it. I think there may be pineapple in there somewhere, because we've had a pineapple sitting on our counter since Friday.

Alissa, I’m sure marinating the tofu overnight will be fine. In fact, I bet it will be more flavorful. Though, I wouldn’t marinade the broccoli overnight. I would just coat the broccoli and let it sit for a few minutes before baking. I hope you like the recipe.
Oh yes, the Black Beans and Rice is super easy to make and very filling. My hubby loves the stuff and so do I.
Ooh, the Schultz's Spicy Original Hot Sauce sounds really good. I just googled it and it looks like I can order it from Amazon. I might have to do that since I haven’t renewed my Costco membership in a few years and it looks like it’s a Colorado hot sauce.

Nope, you don't have to eat anything. Give it away, or I have DH put it out of sight above my head so he can have it if he wants and he can give it to the girls but I can't get at it.
